New Seasonal School Lunch Menus

It has been a busy few weeks for the Aspire Academies Trust catering team. December was an exciting time preparing and delivering the children’s Christmas lunches and January brings the start of our new weekly menu.

With some children remote learning and others still coming into school, our Catering Manager Paul Bodsworth and his team are working hard to ensure all children get a delicious and healthy school lunch.

With so much change at the moment, we wanted to keep the lunchtime experience across the Trust as familiar as possible for the children still coming into school. All children will still be offered a hot lunch each day, with each school serving one of the meals on our Jan-March menu each day.

The menu has been designed with our children’s favourites in mind. Each recipe has been put together with a consideration to its health benefits and offers a variety of different textures and flavours. We make sure to cater for all dietary requirements, as we want all children to have the opportunity to eat together with their friends and enjoy their lunchtime experience. All main meals are also served with seasonal vegetables and potatoes.

We have also been busy packing up food parcels for the children that are eligible for our Aspire Home School Lunch Boxes. Paul has put together the basis of a suggested weekly menu and some simple recipes for parents to follow and adapt as they wish.

Talking about his suggested menu, Paul said “I know how busy parents and carers are at the moment, so I have tried to create a quick and simple menu which will hopefully make lunchtime easier for everyone. I have included ingredients in the box that can be used for a variety of different dishes to make sure there is no waste. I have also included a selection of different fruit and vegetables towards their 5 a day”.

Aspire Home School Lunch Box - Suggested Menu

Easy Potato Wedges Recipe

1 x Baking potato
1 x Tblsp olive oil or sunflower oil
Salt & pepper for seasoning

Grated cheese
Shredded ham
Mixed herbs
Ketchup/Mayonnaise (or both)

STEP 1 - Pre heat your oven to 220*c / GM 7 / 410 F

STEP 2 - Cut your potato in half, lengthwise. Cut one half lengthwise again, then each half into halves. Repeat with second half of potato, should be 8 wedges in total

STEP 3 - Place wedges into a bowl and coat with the oil. Sprinkle salt and pepper to season

STEP 4 - Place wedges onto a non-stick baking tray so they lay flat, bake for 25 mins. Turn wedges over and bake for another 25 mins. Remove from oven and serve with your choice of topping.

Leave the skin on and you can receive the added nutritional benefits of vitamin B6, vitamin C, iron, calcium, zinc, copper and fibre.
